Product Description Akashi Sake Brewery is a 4th generation family brewery which has been producing hand-crafted Sake for over 150 years. The brewery is located in Akashi City, Hyogo Prefecture- which is known as the birthplace of Sake making. Hyogo has fertile land ideal for growing rice, abundant, pure water, and the perfect climate for Sake production. We only make premium Sake, with the finest, locally sourced ingredients. This particular Sake is made only with Yamada Nishiki rice- which is known as the king of the Sake rice. Junmai on the label shows that this Sake has been produced without any added alcohol, which makes for a richer, fuller-bodied Sake. Daiginjo shows that the rice has been polished until it is a maximum of 50% of its original size- which leads to a purer, elegant style os Sake with floral and fruity notes. Genshu shows that this Sake has been bottled at its full strength, without the addition of any water.
